Cool Summer Side Dish

* 2 ears of corn husked
* 3 table spoons extra-virgin olive oil
* Juice of one lime
* Salt
* Pepper
* 15 oz can of black beans, drained and rinsed
* 2 cups grape tomatoes, halved
* 1 cup cooked and cooled brown rice
* ¼ cup finely chopped red onion
* 3 thinly sliced green onions
* 1 clove garlic, minced

Heat a large cast-iron skillet over high heat. Char the ears of corn, rotating on all sides, in the dry skillet until lightly blackened and charred, about 15 minutes. Let cool, and then remove the kernels from the cob with a sharp knife. In a small bowl, whisk together the olive oil, lime juice and salt and pepper to taste. Add the black beans, tomatoes, rice, red onions, green onions, garlic and cooled corn to a large bowl. Toss with the lime vinaigrette.

Chicken, Sausage and Peppers

* 2 tablespoons unsalted butter
* 3/4 pound sweet or hot Italian sausage, cut into chunks
* 3/4 pound skinless, boneless chicken breasts, cut into chunks
* Kosher salt and freshly ground pepper
* 1 tablespoon all-purpose flour
* 1 small onion, chopped
* 2 Italian green frying peppers, cut into 1-inch pieces
* 3 cloves garlic, roughly chopped
* 1/2 cup dry white wine
* 3/4 cup low-sodium chicken broth
* 1/4 cup roughly chopped fresh parsley
* 2 jarred pickled cherry peppers, chopped, plus 2 tablespoons liquid from the jar

Heat one table spoon of butter in a large skillet over medium-high heat. Season the chicken with salt and pepper and then toss with the flour in a bowl. Add the chicken and sausage to the skillet and cook until brown but not cooked all the way through. Add the onion, peppers, garlic, salt and pepper to taste. Let these cook for about three minutes and then add the wine; bring to a boil. Add the chicken broth after a few minutes and simmer. Cover and cook until the sausage and chicken have cooked through.

Take the chicken, sausage and veggies out of the liquid. Increase the heat to high, stir in the parsley, and cherry peppers. Boil this mixture until it is reduced by one-third (2-3 minutes). Remove this mix from the heat and stir in one tablespoon of butter. Pour this sauce over the chicken mixture and ENJOY!!

Smoothies

Some kids don't like to eat in the morning. If your kids don't like to eat pancakes or waffles for breakfast, there is a great trick to overcome this. You can make a smoothie so that they can drink their breakfast. The basic compositions for smoothie are milk, yogurt and fruit. If your kids don't like milk in the smoothie, you can substitute 100% fruit juice. It can be fun to get your kids to help you and they can choose their favorite fruits to mix.

One big issue I see with folks who are having trouble losing weight is not just a lack of motivation to but a tentativeness to get started now. Often I hear, "I don't have the time to cook." With this in mind, I've put together these simple, healthy recipes for weight loss that will have you on your way to dropping those pounds quickly.

1. Smoothies: A monkey can operate a blender. Get one. A blender not a monkey. Healthy smoothie recipes for weight loss are not hard to come by. Most people like to share their creations with the world. Here is a great one to try:

Mango-Peach Smoothie: Perfect for breakfast. Just add 1 sliced peach, 1 sliced mango, 1/2 cup of orange juice, and 1/2 cup of low fat vanilla soy milk.
Peanut Butter and Banana Smoothie: This is a delicious snack. Add a spoonful of reduced fat peanut butter, 1/2 cup of yogurt, 1/2 cup skim milk.
And here's a little tip: A small portion of dark chocolate is a healthy way to make any smoothie tasty.

2. A grain, a green, and a bean: Here is another recipe we can borrow from the vegetarian weight loss diet plan. And its a balanced meal with great sources of protein and fiber. All three are really quick to heat and serve.

Simply pick a grain. I like to use rice, cous cous, millet, or quinoa.
Then pick a green. My favorites are turnips, collards, spinach, or kale.
And finally, choose a bean. There lots of them but I tend to stay with chickpeas, white beans, or lima beans.

3. Soup: Add your favorite vegetables, beans, and/or meats to vegetable stock or low fat and low sodium chicken stock and you've got yourself a delicious meal that can cook while you enjoy your Sunday afternoon. These are really easy to make in a crock pot. It's not always easy to be a meal planner for weight loss. But with soup you can usually make a lot of it at once and eat the rest for leftovers during the week. You can't go wrong with this vegetable soup. Here's one that I like. Just add all of the following ingredients into a pot and simmer for an hour:

1 teaspoon of olive oil

3 chopped zucchinis

1 diced onion

1 can of navy beans (rinse)

1 diced potato

1 lox low fat and low sodium vegetable broth

1 bag fresh spinach

The good thing is that, even if you are a busy body, you can also do this recipe since it will only eat up some 10 minutes, the most, of your precious time. Take note of the ingredients below: (do not forget the slow cooker)

Ground Turkey Soup Recipe

1 lb Ground Turkey or even an Extra Lean Hamburger* (please refer to the note below)
1/4 Tsp. Oregano, dried
3 Cups Water, hot
1/4 Tsp. Black Pepper
1 Cup Carrots, Sliced
8 oz. of Tomato Sauce
1/4 Tsp. Seasoned Salt
1 Cup Celery, Sliced
1 Tbsp. Soy sauce, Low-sodium
1 Envelope Dry Onion Soup Mix
1 Cup cooked Macaroni
1/4 Cup Parmesan Cheese, grated

Here's how to do it:

a. Mix all ingredients together, but not the Parmesan cheese and macaroni yet, in your slow cooker.

b. Cook them low for some six to eight hours.

c. Then have the macaroni cooked (as per instructions) and turn your slow cooker to high level. Then you can put the cooked Parmesan cheese and the macaroni.

d. Have it cooked for some fifteen-twenty minutes more.

e. Then you can serve it up and let the family enjoy!

(Note: The actual ideal size of the slow cooker to be used for a recipe like this is a four quart one. And this recipe can make up to six servings. Then, if you like to use an extra lean hamburger, you have to cook that first and then drain it off of all the grease then put it in your slow cooker.)

The next one is a healthy recipe for kids that is rich in Vitamin C. Take note that this vitamin is really essential for the kids; and the great thing about this is that this vitamin is present in a wide variety of vegetables and fruits. One good benefit of Vitamin C is that it is a powerful agent acting out as anti-oxidant and also as anti-inflammatory one that will definitely prevent damages to the cells that are oxygen-based.


And an easy source of Vitamin C is found by taking different fruits and veggies which can also be delicious especially when added with attractive colors and healthy textures that are still appealing to children. Keep in mind also that some delicious sources of this wonderful vitamin are citrus fruits such as oranges, lemons, and strawberries. That is why I have here a recipe called "Strawberry Fluff Recipe". Take note of the following details and ingredients:

You will need the following:

16 oz. of fresh or frozen strawberries
1 large Cool Whip tub
1/4 cup of sugar
1 pkg. marshmallows, colored

Here's how to do it:

1. First, cut up all the strawberries
2. Then mix it with the Cool Whip
3. Add the sugar
4. Mix them well
5. Make sure you stir in the package marshmallows, 1/2 to 3/4
6. Finally, refrigerate first before serving.

And finally, for busy cooks and moms out there, here is one recipe about one of the most loved food of kids now-meatloaf. It is a known fact that there are a lot of meatloaf recipes out there, but then one good recipe should be done in a matter of minutes so busy moms can still prepare it and then move on to the next task. This recipe here is something that will be a variety to the usual meatloaf recipe that we already know.

You can also use ground beef here, if you prefer it. Still some people also make use of sausage, ground veal, or ground pork-the choices are really limitless. But then let me just present here a basic one that will really save you time and efforts. I call this recipe as "Basic and Easy Meatloaf Healthy Recipe". Read on.

You will need the following:

1 1/2 pounds of ground chuck
2 eggs
1 1/2 teaspoon of salt
3/4 cup of bread crumbs, Italian style
1 teaspoon of each garlic powder & also onion powder, (though this is really optional)
1/2 teaspoon of pepper
1 large onion which should be finely chopped
2 tbsp of Worcestershire sauce (optional, but can be good)
1/4 cup of catsup (and can be more for top if you desired)

You will have to do the following:

1. First, preheat your oven to 375 F
2. Then in a large loaf pan (can also be ovenproof baking dish, if you want) start to mix all the ingredients
3. Start shaping this into loaf shape.
4. You can bake it at 375 for an hour or until it is done.
5. You can opt to cover the top with a lot more catsup especially during the last remaining 20 minutes of your baking.

Often we are too busy to prepare healthy, delicious foods at home. With a little planning and the help of a few time saving techniques, it is simple to prepare healthy, fast recipes for you and your family.

Instructions

Step 1
It helps to plan ahead. This is where your dry erase board comes in handy. You can purchase boards that have monthly or weekly calendars printed on them. If yours doesn't, that's okay. You can just list the days down the side or draw your own weekly calendar on it with permanent marker so it doesn't wipe off.

When planning your dinners for the week, keep in mind any nights you will be busy or getting home late and plan the quickest meals for then. Also keep in mind any perishables you will need to use up that week, and plan your meals to incorporate them. Soups and casseroles are a wonderful way to use up veggies that are starting to wilt. You can also make sure you have everything on hand to cook your meals for the week, cutting down on last minute trips to the grocery store.

Step 2
When cooking healthy recipes, the focus should be on vegetables. Avoid oils, cream sauces, or using a lot of dairy or meat. Healthy proteins such as beans or tofu can replace meat in many meals. In your favorite recipes, consider healthy substitutions where possible. A few examples are:

Replace half the oil or shortening in baked goods with sugar free applesauce.
Cook with healthier oils, such as olive or canola.
Use only the egg whites in recipes.
Use whole wheat pasta and flour.
Use skim or 2% milk. If a recipe calls for heavy cream, you can mix powdered no fat milk with half the water to replace it.
Use low sodium alternatives when available.
Use brown rice instead of white rice.
Think of meat as a condiment or side dish instead of the main course.

Step 3
Choose recipes that can be made with healthy, quick cooking methods. A stir-fry only takes a few minutes to prepare. You can stir-fry vegetables and meats or tofu in a tablespoon of canola oil for just a few minutes and then use them to top rice or whole wheat or buckwheat noodles. Steaming is another healthy method of cooking. There are microwave steamers available that make it possible to enjoy steamed veggies with just a push of the button. Other healthy cooking methods are broiling, grilling, and braising.

Also consider uncooked meals for the quickest preparation. Salads, sandwiches and wraps can be healthy and only take a few minutes.

Step 4
Do as much preparation as possible ahead of time. When you purchase healthy meats, such as chicken, cook it all at once using a healthy method, then freeze it in meal sized portions. If most of your favorite recipes call for chopped veggies, chop the whole onion at once then store. You only have to grab a handful or thaw out the container, then assemble when it is time to cook. By using your dry erase board to plan meals ahead of time, you will be able to check the night before to see what needs to be pulled from the freezer to thaw for tomorrow's dinner.

Step 5
Keep track of recipes you and your family enjoy in your own personal cookbook. You can collect recipes in a binder and write down experiments that worked and have them on hand when you are feeling uninspired. If you make substitutions, remember to note it on the recipe so you will remember next time. After you prepare a recipe in your binder, make a note of anything you wish to do differently next time and the time it took you to make it. This will help you when you plan future meals.

Tips & Warnings

Freeze leftovers and use for a quick lunch or meal on a day you are too busy to cook. Save your vegetable peelings in a container in the freezer to make stock for quick soups. Instead of using bread for a sandwich, wrap your filling in a large lettuce leaf.

Most people are quite capable of doing a three day water fast. Be sure to obtain purified water only. During these three days, slow down your daily activities - specially physical activities. Some may even find it is better to take to bed and keep warm if the weather is cold.

Note from Healthrecipes.com: We don't recommend doing a three day water fast. It's best to drink plenty of freshly-made fruit and vegetables juices for three days.

The Detox Diet Plan

After these three days - for one week put yourself on a monotrophic diet , i.e. eat only one type of fruit at each meal.

For example: BREAKFAST could be melon only. Eat as much as you like and feel satisfied that you have had enough. All types of melons are good. Honeydew, Cantaloupe, Gala or Watermelon.

LUNCHTIME: Eat only oranges and grapefruit or pineapples or plums whatever you fancy but don't mix the fruits. Eat till hunger is satisfied.

4 p.m. Have a large (12 oz.) glass of freshly pressed carrot juice.

EVENING: Eat only apples, pears, grapes or bananas. Eat only one fruit at a time and eat till hunger is satisfied. During the week you can vary daily the fruits you want to eat on that particular day.

You can resume your household duties or light office work but do not exert yourself physically. Conserve energy. It is possible that some of you may feel some reactions, like light headedness, nausea at times, a little listlessness and feeling of tiredness and mental irritability. Persevere - Rome wasn't built in a day. After all it took you years to get into the toxic state that you now find yourself into. The symptoms will go away eventually. Lots of sleep and rest are essential at this stage so do not plan any social events.

The Detox Diet Plan continued ...

After these ten days - I suggest you go for one month on an all raw food diet as follows:

DETOX BREAKFAST

Fresh fruit only of oranges, kiwi's, pineapple, apple, plums, grapefruit or any other acid fruits. You can now mix the fruits. Eat enough to satisfy your hunger. Just one orange and one apple will not be enough. You have to get your calories from the fruit you eat.

DETOX LUNCH

Eat heartily of grapes, pears, bananas, mangoes, fresh dates, and with this meal eat a head of lettuce, 1-2 sticks of celery and a handful of dried raisins or sultanas, or 3-4 dried figs or 10-12 dried Hunza apricots.

DETOX SNACK

4 p.m. A large 12 oz glass of freshly squeezed carrot juice.

DETOX EVENING

A large Rainbow salad of grated red cabbage, grated carrots, grated beetroot, chopped up celery, watercress, cucumber, and red or green peppers. A dressing could be made as follows: Put 2-3 tomatoes in the blender, 1 whole peeled large size avocado and a pinch of marigold bouillon powder and 1 tea spoonful cold pressed linseed oil or olive oil. Blend the lot and pour it on your Rainbow salad and mix thoroughly. Enjoy it with some lettuce leaves. To this salad you add 3 ozs of nuts and seeds. Not salted nuts and not peanuts. Brazil, Cashew, Almonds, Sunflower seeds, Pumpkin seeds. Whatever you fancy. Chew well or grind the nuts dry and sprinkle on the Rainbow salad or put ground nuts in a blender, add just a little water and make it into nut cream.

On such a regime -- if you have not cheated in between -- at the end of that month you will feel cleaner, fitter, a little slimmer and more energetic with the added bonus of some of your symptoms disappearing. No cooked food should be eaten. Full activity can be resumed on this raw diet. This regime has worked on thousands of cases.

The choice is yours. Remember no one can cure you. Your own body, given the opportunity will rebuild itself.

How to Make Healthy Recipes Chicken Alfredo

Healthy recipes and Chicken Alfredo – does that sound like an oxymoron? Does it seem like an impossible task to include chicken Alfredo in with healthy recipes? It is not impossible if you switch around a few of the ingredients, and amazingly the result is a creamy and delicious chicken Alfredo that can be included with the healthy recipes. The following recipe is not an exact science, so don’t stress over precise measurements.

Instructions

Step 1
Dice the raw chicken into bite sized pieces. Healthy Recipes use boneless and skinless breasts.

Step 2
Add several tablespoons of canola oil to a skillet and heat. For healthy recipes choose a healthy oil. Add the chicken and begin to stir fry on high. Add some diced garlic or use powdered garlic. Just before the chicken begins to brown, add the bell pepper and onions, continue to cook until the chicken is a bit crispy in some pieces and all pieces are completely cooked.

Step 3
Shove the chicken over to one side of the skillet. This can be considered one of the healthy recipes because there is no heavy cream, yet there will be some butter added. In the open area add the butter, melt, and then add the flour, stirring to make a paste or roux. Add about a half a cup of yogurt, stir all ingredients together. Add some milk to thin sauce.

Step 4
Stir well, add more yogurt if it needs to be thicker, or more milk if you need to thin. Add more garlic if necessary,to personal preference. Lightly salt and pepper. For healthy recipes use yogurt instead of cream or sour cream.

Step 5
Stir in some grated Parmesan cheese. I use the hard cheese, and grate it myself. About a half of cup, more or less. To stay true to healthy recipes, go a little lighter on the cheese.

Step 6
Serve over warm pasta and top with more Parmesan cheese. Choose the pasta that best fits your healthy recipes needs and desires.

Skinny Roasted Garlic Mashed Potatoes

This recipe serves: 1

Ingredients:
1 1/2 cloves of garlic,unpeeled splash of olive oil
1/2 large potato (Idaho or russet)
about 2 1/2 tablespoons Basic Chicken Stock (see recipe), or low-sodium canned
salt to taste
freshly ground black pepper

Cooking Instructions

1. Preheat the oven to 350°F.

2. Place the garlic cloves in an ovenproof dish and drizzle with olive oil. Place the dish, uncovered, in the oven for 15-20 minutes until the garlic is golden brown and soft.

3. Remove from the oven and let cool.

4. Peel the potatoes and cut them in half. Place them in a pot and cover with cold water. Bring to a boil over high heat and simmer until the potatoes are tender when pricked with a fork, about 30 minutes depending on the size of the potatoes. Drain.

5. Bring the stock to a boil, and turn down to a simmer.

6. Squeeze the roasted garlic clove to release each clove of garlic. Mash the garlic with a fork and throw the skins away.

7. Mash the potatoes with a potato masher or fork, or use a food mill. Add the roasted garlic. Slowly add the stock until the desired consistency is reached.

8. Adjust the salt and pepper to taste.

Roast Chicken with Citrus and Thyme

This recipe serves: 4

Ingredients
1 whole chicken, about 5 pounds salt to taste freshly ground black pepper
1 lemon, halved
1 orange, halved
1/2 onion
1/2 cup roughly chopped celery
4 sprigs fresh thyme
1 tablespoon olive oil


Cooking Instructions

1. Preheat the oven to 350°F.

2. Rinse the chicken inside and out with cold water. Pat dry with paper towels. Season the cavity of the chicken with salt and pepper.

3. Squeeze the juice from the lemon and orange halves all over the chicken. Stuff the lemon and orange halves into the cavity, along with the onion, celery and thyme.

4. Place the chicken on a rack in a roasting pan. Drizzle the olive oil over the skin and season with salt and pepper.

5. Roast the chicken in the oven for 1 1/2 hours or until a thermometer inserted into the thickest part of the thigh registers 160°F.

6. Let the chicken rest for 15 minutes. Remove and discard the skin before carving.

Serving Size: 1/4 skinless chicken

Beef Fried with Chilli (Serves 5)

Ingredients
600 g lean beef
25 g (3 tbsp) vegetable iol
3 g (1/2 tsp) salt
200 ml (1 cup) water
10 g (10) dried chillies }
120 g (12) shallots } ground
20 g (4 pips) garlic }

Garnishing
90 g (1) onion,sliced into rings
50 g (1/2 cup)green peas
50 g (1) carrot,cubes
2 salad leaves

method
1. Heat oil and saute ground ingredients until crisp.
2. Add beef pieces and water.
3. Cook until mixture becomes dry
4. Add garnishing and serve.


Daging Goreng Cili

Bahan-bahan;
600 g daging lembu tanpa lemak
25 g (3sdm) minyak sayuran
3 g (1/2 sdt) garam
200 ml (1cawan) air
10 g ( 10 biji) cili kering }
120 g (12 ulas)bawang merah } digiling
20 g (4 ulas) bawang putih }

Bahan hiasan:
90 g (1 biji) bawang besar,dipotong bulat
50 g (1/2 cawan) kacang peas
50 g (1 biji) lobak merah,dipotong kiub
2 helai daun salad

Cara memasak:
1. Panaskan minyak dan tumiskan bahan yang telah digiling halus sehingga garing.
2. Masukkan daging lembu dan air
3. Masak sehingga kering.
4. Masukkan bahan untuk hiasan dan hidang.

Note/Nota:
Lean beaf is used in the recipe:this reduces calories and saturated fat.
The oil used is lesser than that of the original recipe.This also reduces calories.

Method
1. Heat oil in a wok.Add ginger,papper and ground ingredients.

4. Add beef and cook till gravy thickens
5. Add onions and red chillies.Stir well and remove
6. Garnish with coriander leaves and spring onion.

150 g (15 ulas ) bawang merah }

Bahan Hiasan

30 g (3 biji) cili merah,dipotong panjang dan buang biji
1 batang daun sup
1 batang daun bawang

Cara memasak
1. panaskan minyak dalam kuali,masukkan halia,lada sulah dan bahan yang telah digiling halus.
2. masukkan air,biarkan mendidih.
3. Masukkan sos tiram.
4. Masukkan daging dan masak hingga pekat.
5. Masukkan bawang besar dan cili merah,gaulkan dan angkat
